Step 1: Preheat oven to 400°F. Line a baking sheet with parchment paper. Lay the thawed puff pastry on a lightly floured surface and cut out 18 circles using a round cookie cutter.

You can defrost puff pastry in the microwave, but do it slowly to avoid sogginess or partial cooking. Place one sheet on a microwavable plate, set to low power, and check frequently. Once it softens, flip and rotate for even thawing, then remove when fully defrosted.
Step 2: Mix water and egg in a small bowl. Brush the bottom of each pastry circle, place a Reese’s cup in the center, and cover with another pastry circle. Seal edges with a fork, brush with egg wash, and sprinkle with sugar. Chill for 30 minutes before baking.

Puff Pastry with Chocolate Filling
Ingredients
- 2 puff pastry sheets thawed but still cold
- 1 teaspoon water
- 1 egg
- 9 regular size Reese's Peanut Butter Cups
- 2 cups chocolate sauce
- chocolate sprinkles
Method
- Preheat oven to 400°F.
- Line a baking sheet with parchment paper.
- Unfold the thawed puff pastry sheets on a lightly floured surface. Using a round cookie cutter, cut out 18 circles of dough.
- In a small bowl, mix together the water and egg. Use a small pastry brush to brush the bottom of each puff pastry circle.
- Place a Reese's Peanut Butter Cup in the center of each of the puff pastry circles.
- Place the remaining 9 dough circles on top of the peanut butter cups and use a fork to pinch together both pastry circles.
- Brush the tops of the pastries with the remaining egg wash.
- Place the tray in the refrigerator for 30 minutes to rechill the dough.
- Bake pastries for 13 minutes or until the tops are golden brown.
- Remove from the oven and allow the puff pastry circles to cool.
- Drizzle the chocolate sauce on top of the pastry and then add the chocolate sprinkles.
- Garnish with chopped peanut butter cups.
