Pumpkin Glazed Donuts with Crumb Topping

Pumpkin Glazed Donuts are delicious and EASY. They're baked in the oven and not fried using a great donut pan that you can easily find online or in most home goods stores that sell kitchen tools.

Ingredients

For the Donuts

  • 1 box spice cake mix
  • 3/4 cup canned pumpkin puree; NOT pumpkin pie filling
  • 2 eggs
  • 3 tbsp melted butter

For the Crumb Topping

  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 tsp pumpkin pie spice
  • 2 tbsp butter
  • 2 tbsp Quaker Quick Oats

For the Glaze

  • 1 cup powdered sugar
  • 1 tbsp milk
  • 1/2 tsp. vanilla

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine the crumb topping ingredients in a bowl and using a pastry cutter, or two knives cut the butter into the mixture until you have crumbs; set aside.
  3. In a mixing bowl, combine the cake mix, pumpkin puree, eggs and melted butter. Mix until combined.
  4. Using a plastic pastry bag, add the mixture into the donut pan that has been sprayed with a non-stick spray. Use a butter knife to spread the donut batter out smoothly.
  5. Place about one tablespoon of the crumb mixture onto the top of each donut batter.
  6. Bake for 10 minutes to 12 minutes or until a toothpick inserted into one of the donuts comes out clean. Let the donuts cool slightly before removing them from the pan.
  7. Combine the glaze ingredients together and drizzle over the cooled donuts.



Notes

Freezing Tips:

  • These donuts will freeze well for up to 2 months.
  • Place the donuts on a baking tray that's been lined with parchment paper and then place the tray in the freezer to flash freeze the donuts for about 30 minutes.
  • Remove the frozen donuts and place in a freezer safe container or plastic bag.
  • You can freeze the donuts for up to 2 months.
  • Thaw overnight in the refrigerator and warm up to your liking in the microwave.
