Made with sheets of puff pastry and your favorite pizza toppings, these Mini Pizza Puffs are an easy bite-size appetizer to throw together for your next family gathering.

On a lightly floured surface or piece of parchment paper, unfold the sheet of puff pastry. Using a rollin gpin, gently press out the creases in the puff pastry.
Slice the puff pastry into half and then half again so you have 4 pieces.
Then slice each of those 4 pieces into 3, so you have 12 pieces.
Finally slice each of the 12 pieces in half, so you have 24 pieces total.
Coat the muffin pan with non-stick baking spray and press a square of puff pastry into each well of the pan. Use the tart tamper to press the pastry in without tearing it.
In a small bowl, combine the melted butter with the garlic powder and parsley. Then using a pastry brush, brush the butter mixture over each square of puff pastry.
Then divide one cup of the mozzarella cheese between each of the squares of puff pastry.
Add a little pizza sauce on top of the cheese and then add the remaining cup of mozzarella cheese on top of the pizza sauce followed by the pepperoni slices.
Place the muffin pan in the refrigerator or even the freezer to re-chill the dough before baking.
Bake in a preheated 400°F oven for 12 to 15 minutes or until golden brown.
Allow to cool slightly before serving.
Notes
Be sure to re-chill the dough once the puffs are prepared so the pastry will puff up and get crispy, flaky layers.
