In a large bowl, beat together the brown sugar, granulated sugar and coconut oil.
In another bowl, mix together the flour, baking soda, cinnamon and salt.
Add ⅓ of the flour mixture to the sugar/coconut mixture. Mix together and then repeat until the flour and sugar mixture is completely combined with the sugar mixture.
Add in the vanilla extract and egg. Combine together and then stir in the oats.
Finally, fold in the chocolate chips.
Fit a piece of parchment paper to the inside of the air fryer. Once you have the paper sized correctly, remove the paper to the countertop or cutting board.
Scoop the dough into balls and add them to the parchment paper. Then gently lift the parchment paper and add it back to the air fryer.
Air fry the cookies for 5 minutes or until golden brown.
Remove the cookies and transfer to a baking rack to cool.
Repeat the steps until all the dough is baked!
Depending on the size of the cookie scoop you use, you should have about 16-20 cookies.
