Ultimate Chocolate Cake from a Cake Mix

Sometimes the best chocolate cake really does start from a cake mix.

For the Cake:

  • 1 box chocolate cake mix
  • 1 small box instant chocolate pudding mix
  • 1 cup sour cream
  • 1 cup vegetable oil
  • 4 eggs
  • ½ cup milk
  • 1 teaspoon vanilla
  • 2 cups mini chocolate chips

For the Chocolate Glaze Icing:

  • 1 ½ cups powdered sugar
  • 4 tablespoons unsweetened cocoa powder
  • 3 tablespoons milk; more if needed
  • 2 teaspoons vanilla extract

Instructions

For the Cake:

  • Using your stand mixer, combine all the ingredients together, except the chocolate chips. Then add the chocolate chips. The batter will be thick.
  • Pour the batter into the cake pan of your choice that has been sprayed with non-stick cooking spray.  
  • Bake in a preheated 350 degree oven for 30 to 35 minutes or until a toothpick inserted in the middle of the cake comes out clean.
  • Depending on the cake pan you use, you may have to bake the cake longer or shorter. My mini cakes took around 30 minutes to bake completely. BUT I started checking them at 25 minutes. I followed the directions on the back of the cake mix box for baking using a bundt pan. 
  • Let the cake cool in the pan for a few minutes and then remove and place on a wire rack to cool completely before adding the chocolate glaze.

For the Chocolate Glaze Icing:

  • Combine the powdered sugar and cocoa powder.
  • Add the remaining ingredients and mix until smooth.
  • Depending on the consistency of icing you desire, you may need to add more milk. 
  • Using a spoon, drizzle the icing over the cake.
