For the Cake:
- 1 box chocolate cake mix
- 1 small box instant chocolate pudding mix
- 1 cup sour cream
- 1 cup vegetable oil
- 4 eggs
- ½ cup milk
- 1 teaspoon vanilla
- 2 cups mini chocolate chips
For the Chocolate Glaze Icing:
- 1 ½ cups powdered sugar
- 4 tablespoons unsweetened cocoa powder
- 3 tablespoons milk; more if needed
- 2 teaspoons vanilla extract
For the Cake:
Using your stand mixer, combine all the ingredients together, except the chocolate chips. Then add the chocolate chips. The batter will be thick.
Pour the batter into the cake pan of your choice that has been sprayed with non-stick cooking spray.
Bake in a preheated 350 degree oven for 30 to 35 minutes or until a toothpick inserted in the middle of the cake comes out clean.
Depending on the cake pan you use, you may have to bake the cake longer or shorter. My mini cakes took around 30 minutes to bake completely. BUT I started checking them at 25 minutes. I followed the directions on the back of the cake mix box for baking using a bundt pan.
Let the cake cool in the pan for a few minutes and then remove and place on a wire rack to cool completely before adding the chocolate glaze.
For the Chocolate Glaze Icing:
Combine the powdered sugar and cocoa powder.
Add the remaining ingredients and mix until smooth.
Depending on the consistency of icing you desire, you may need to add more milk.
Using a spoon, drizzle the icing over the cake.
