Chocolate Pizzelles
Chocolate Pizzelles are a light, crisp, slightly sweet Italian cookie.

Ingredients

large eggs
¾
cup
sugar
1
stick butter
melted and cooled
1 ¾
cups
flour
2
teaspoon
baking powder
3
tablespoon
cocoa
3
tablespoon
additional sugar
Instructions
Melt the butter and set aside.
Beat the eggs and sugar until creamy, about 2 to 3 minutes.
Add the melted butter.
Sift together the flour, baking powder, cocoa and additional sugar.
Slowly add to the wet butter, egg, sugar mixture until combined.
Heat the pizzelle iron and spray with a non-stick baking spray.
Place about 1 Tablespoon of batter on each grid.
Close the iron and let cook for about 30 to 40 seconds.
Remove the cookies and cool on a rack.

* * *Tip: Try to place your batter just a little bit behind the center of the pattern on the iron so you can get a more even pizzelle cookie.
