Chocolate Pizzelles

Chocolate Pizzelles are a light, crisp, slightly sweet Italian cookie.

Ingredients

  • 3 large eggs
  • ¾ cup sugar
  • 1 stick butter melted and cooled
  • 1 ¾ cups flour
  • 2 teaspoon baking powder
  • 3 tablespoon cocoa
  • 3 tablespoon additional sugar

Instructions

  • Melt the butter and set aside.
  • Beat the eggs and sugar until creamy, about 2 to 3 minutes.
  • Add the melted butter.
  • Sift together the flour, baking powder, cocoa and additional sugar.
  • Slowly add to the wet butter, egg, sugar mixture until combined.
  • Heat the pizzelle iron and spray with a non-stick baking spray.
  • Place about 1 Tablespoon of batter on each grid.
  • Close the iron and let cook for about 30 to 40 seconds.
  • Remove the cookies and cool on a rack.

Notes

* * *Tip:  Try to place your batter just a little bit behind the center of the pattern on the iron so you can get a more even pizzelle cookie.
