Homemade Amish White Bread

The very first yeast bread recipe I ever made. I've been making this recipe for 30 years!

Ingredients

  • 1 package yeast
  • ½ cup warm water
  • cup sugar
  • 2 teaspoon salt
  • 2 cups warm water
  • 2 ½ tablespoon melted butter
  • 6 - 7 cups flour

Instructions

  • Dissolve yeast in ½ cup warm water. I always heat my water in the microwave for about 60 seconds. You want the temperature of the water to be 105 to 115 degrees for the yeast to grow and be happy. You want happy yeast!
  • Set aside and let the yeast proof; aka "get happy."
  • Add the sugar, two cups warm water and melted butter to the bowl of your Kitchen Aid mixer using the dough hook.
  • Add the yeast.
  • Gradually add the flour, one cup at a time, to form a soft dough, mix until the dough pulls away from the sides of the bowl.
  • Set a kitchen timer for eight minutes, and let the mixer knead the dough for you; or you can turn the dough out onto a floured surface and knead by hand.
  • Transfer the dough to a lightly greased bowl and cover with plastic wrap.
  • Set the dough aside and let the dough double in size; about 2 hours.
  • Punch the dough down and divide into TWO portions.
  • Shape the dough into loaves and place in two baking pans that have been sprayed with non-stick cooking spray, cover with plastic wrap and set aside for another 2 hours or until doubled in size.
  • Remove the plastic wrap and brush the top of each loaf with melted butter.
  • Bake in a preheated 425 degree oven for 20 minutes or until the crust is golden brown and when you tap the top of the bread you hear a hollow sound.
  • Allow to cool in pans for about 10 minutes and then turn the bread loaves out onto a cooling rack to finish cooling.

You can also make this recipe by hand as I did for many years before I received my Kitchen Aid Mixer for Mother's Day a few years ago.
