In a small bowl add white chocolate chips and shortening. Mix together. Microwave for 30 seconds. Stir. Then continue microwaving in 15 second intervals until the chocolate is melted and smooth.
Holding a wafer in one hand over the bowl of white chocolate, use the other hand to spoon the white chocolate on all sides of the wafer starting about ½ way down the cookie.
Once all sides are coated lightly, place on wax paper and decorate as you wish. Repeat as many wafer cookies as you wish.
Allow to sit at room temperature until dry and the chocolate is hardened or you may place in the refrigerator to speed up the process.
Notes
You can also use coconut oil or regular vegetable oil in place of the shortening.
