Add the honey and water together to a small saucepan. Over medium heat, stir frequently until the honey dissolves
Remove the honey and water mixture from heat and allow it to cool for about 10 minutes before pouring into a pitcher.
Next add the freshly squeezed lemon juice, the fresh mint, basil and thyme. Then add in the minced ginger. Finally add the lemon slices.
Stir everything together to combine and place in the refrigerator to chill.
Right before serving, remove the pitcher from the refrigerator and pour the sparkling water into the pitcher. Stir to combine.
Pour into glasses filled with ice and serve immediately.
Notes
Before adding the sparkling water, lightly muddle the basil leaves in the glass. This releases the fragrant oils, maximizing the herb's flavor in your drink. Be careful not to over-muddle, as this can make the basil taste bitter.
