Place the Alaska pollock fillets in a baking dish that's been sprayed with non-stick cooking spray.
Spoon a little of chimichurri sauce on top of each fillet.
Bake for 15 to 18 minutes.
While the fish is cooking, get the topping ingredients ready for the taco bar.
To assemble the taco's, place the shredded lettuce on the bottom of the taco shell or boat followed by the sliced fish. Top with diced tomatoes, black olives and salsa. Drizzle with more of the chimichurri sauce if desired.
