Scrambled Egg Muffins are easy to prepare.  You can even make them a few days ahead of time and store in the freezer for an easy breakfast on the go!

Servings: 10
  • 6 eggs
  • ¼ cup milk
  • 3 strips of bacon; cooked and crumbled
  • ½ cup cheddar cheese; shredded
  • 1 tbsp chopped chives
  • salt and pepper
  1. In a bowl, whisk the eggs together with the milk.
  2. Stir in the cheese, crumbled bacon and chopped chives, salt and pepper.
  3. Spoon into a muffin pan that has been sprayed with non-stick baking spray.
  4. Bake in a preheated 375 degree oven for 12 to 15 minutes or until cooked through.
  5. Let cool slightly before removing from muffin pan.
