Remove the cookie dough from the package and knead ¼ cup all-purpose flour into the dough. This will help make the dough easier to roll out.
On a lightly floured surface, roll out the sugar cookie dough until ¼ inch thick.
Use an Easter egg shaped cookie cutter to cut out cookie shapes.
Place the cookie shapes onto a baking sheet lined with parchment paper.
Refrigerate the cookies for at least 30 minutes before baking. This will help them keep their shape.
Bake the cookies 8 to 11 minutes or until lightly browned around the edges.
Allow the egg-shaped cookies to cool completely before spreading the frosting on top.
Using an electric mixer, mix the softened cream cheese, granulated sugar and vanilla in a bowl until smooth and creamy.

Notes
If you find the dough is still too sticky to roll out, try placing it between two pieces of parchment paper.
Refrigerate the cut out cookies before baking for about 30 minutes. This will help them not to spread while baking. If you find the cookies have spread too much after they have baked, use the cookie cutter again.
Make sure the cream cheese is soft before preparing the frosting.
Make sure the fruit is completely dry before adding to the top of the frosting.
If you are making these ahead, frost the cookies but wait to add theruiit until right before serving.
