Easy Chicken Marsala is one of those recipes you need in your recipe box. Easy enough for a weeknight meal but delicious enough to serve to company for a special occasion.
In a shallow dish or bowl, mix together the flour, salt and pepper.
Coat chicken pieces in flour mixture.
Add two tablespoons of butter and two tablespoons of olive oil to a large frying pan.
Add the chicken to the frying pan and cook until lightly browned on both sides.
Remove the chicken from the pan and keep warm while you cook the mushrooms and onions.
Add the remaining butter and olive oil to the same pan.
Saute the mushrooms and onions over medium high heat for a few minutes.
Add the Marsala wine and chicken broth.
Bring to a boil, reduce heat and continue to simmer for about 10 minutes; until the sauce begins to thicken scrapping the bottom of the pan with a wooden spoon to get up all the browned bits.
Transfer the chicken to a 9 X 13 inch baking pan that has been coated with non-stick cooking spray.
Pour the sauce with the onions and mushrooms over the chicken in the baking dish.
Sprinkle the ½ cup Parmesan cheese over the chicken followed by the 1 cup of shredded mozzarella cheese.
Bake in a preheated 425 degree oven for about 10 to 15 minutes or until the chicken is completely cooked and the cheese is melted.

Note: Traditional Chicken Marsala doesn't call for any cheese, but my family enjoys it with cheese and I think yours will too!
