A chewy chocolate cookie with marshmallow and crushed peppermint topping. Chocolate Marshmallow Peppermint Cookies are perfect for bake sales, holiday parties and even gift-giving over the holiday season.
In a large mixing bowl, cream together the butter and sugar till smooth.
Add in the eggs, one at a time and then the vanilla.
In a separate bowl, combine the flour, pudding mix, cocoa until blended.
Slowly add the dry ingredients into the wet mixture.
Drop by rounded spoonful onto a baking tray that's been lined with parchment paper.
Bake in a preheated 350 degree oven for about 9 minutes.
Remove the tray from the oven and immediately top each cookie with a marshmallow that's been cut in half.
Return the tray to the oven and bake until the marshmallow begins to melt and spread; about 5 minutes.
Allow the cookies to cool before removing to a wire rack.
While the cookies are cooling, melt the chocolate chips in the microwave in 30 second intervals until smooth and completely melted.
Drizzle the melted chocolate on top of each cookie.
Top with the crushed peppermint candies.
Notes
The original recipe makes 18 cookies, however, I found them too big especially with keeping the marshmallow the full size it comes in. I made the cookies a little smaller and sliced the marshmallows in half and got a much cuter cookie that was perfect for Christmas cookie trays.
