Baking Instructions

Drop by rounded spoonful onto a baking tray that’s been lined with parchment paper. Then place the tray in a 350 degree preheated oven and bake for 9 minutes.

Tip for Adding the Marshmallows

The very first time I made these cookies I used one entire marshmallow on top of each cookie. BIG MISTAKE. As a result, the marshmallow melted over the entire cookie creating a huge mess.

Thankfully I had only baked one tray of cookies with the entire marshmallow.  I was able to adjust everything to have the remaining cookies turn out perfect by slicing each marshmallow in half.

Please make sure you cut each marshmallow in half before adding them to the top of the cookies.

Once you have the marshmallows on top of the baked cookies, return the tray to the oven and bake until the marshmallow begins to melt and spread; about 5 minutes. But watch closely because if the marshmallow spreads too much, you won’t have the pretty cookie as seen here in these photos.

Remove the cookies from the baking tray to a cooling rack while you  prepare the melted chocolate.

How to Drizzle the Melted Chocolate

While the cookies are cooling, melt the chocolate chips in the microwave in 30 second intervals until smooth and completely melted.

Drizzle the melted chocolate on top of each cookie. You can add the melted chocolate to a piping bag if you want. Another way to drizzle the chocolate is by dipping a spoon into the melted chocolate and then quickly “sweep” the melted chocolate over each cookie to get the desired look you want.

Frequently Asked Recipe Questions

When should you start baking Christmas cookies?

Now! There’s no need to bake the few days leading up to the holidays when you can easily freeze homemade cookies or even the cookie dough weeks before Christmas.

How do you keep cookies fresh for Christmas?

The best way to keep cookies fresh for Christmas is to store them properly in an air-tight container in the refrigerator or in a cool, dry place, such as the back shelf of your pantry. You can also flash freeze them on a baking tray until frozen solid. Then place them in containers or freezer safe plastic bags.

How long can you freeze cookies for Christmas?

Properly packaged, you can store Christmas cookies in the freezer for up to six months.

Yield: 28 - 32 depending on size.
Prep Time: 15 minutes
Cook Time: 13 minutes
Total Time: 28 minutes

A chewy chocolate cookie with marshmallow and crushed peppermint topping. Chocolate Marshmallow Peppermint Cookies are perfect for bake sales, holiday parties and even gift-giving over the holiday season.

Ingredients

  • 1 1/4 cups butter
  • 2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 package chocolate pudding mix- 3.56 ounce size
  • 3/4 cup cocoa
  • 1/2 tsp salt
  • 1 package large marshmallows
  • 1 cup chocolate chips
  • 1/2 cup peppermint candies crushed

Instructions

  1. In a large mixing bowl, cream together the butter and sugar till smooth.
  2. Add in the eggs, one at a time and then the vanilla.
  3. In a separate bowl, combine the flour, pudding mix, cocoa until blended.
  4. Slowly add the dry ingredients into the wet mixture.
  5. Drop by rounded spoonful onto a baking tray that's been lined with parchment paper.
  6. Bake in a preheated 350 degree oven for about 9 minutes.
  7. Remove the tray from the oven and immediately top each cookie with a marshmallow that's been cut in half.
  8. Return the tray to the oven and bake until the marshmallow begins to melt and spread; about 5 minutes.
  9. Allow the cookies to cool before removing to a wire rack.
  10. While the cookies are cooling, melt the chocolate chips in the microwave in 30 second intervals until smooth and completely melted.
  11. Drizzle the melted chocolate on top of each cookie.
  12. Top with the crushed peppermint candies.

    Notes

The original recipe makes 18 cookies, however, I found them too big especially with keeping the marshmallow the full size it comes in.

I made the cookies a little smaller and sliced the marshmallows in half and got a much cuter cookie that was perfect for Christmas cookie trays.

    Christmas in July

    Christmas Cookies

Did you know that there really is such a thing as Christmas in July? It’s not something “bloggers” created!

Back in 1940 a movie was released titled “Christmas in July.” In 1944, the United States Post Office started promoting an early Christmas mailing campaign with a Christmas in July Luncheon.

American advertisers finally picked up on the idea and started promoting Christmas in July in 1950.
