Chicken Cutlet Parmigiana Sandwich - Breaded crispy chicken cutlets topped with marinara sauce and smothered in mozzarella cheese is an easy weeknight meal option that's ready in under 30 minutes!
Dip the chicken cutlets one at a time in the beaten egg and then into the breadcrumbs. Make sure both sides of the chicken are covered in breadcrumbs. Then place on a baking tray while you get the cast iron skillet ready.
Heat the oil in a heavy pan and add the chicken cutlets to the hot oil. Allow them to cook in the oil for about 5 minutes on each side. Don't worry about checking to see if they're cooked all the way through at this point.
They'll continue cooking in the oven as we bake the sandwiches.
Place both rolls, sliced in half on a baking tray that's been lined with parchment paper. Then add one chicken cutlet to the bottom half of each roll. Spread the butter on the top half of each roll.
Spread about 2 to 3 tablespoons of marinara sauce on top of each chicken cutlet followed by the mozzarella cheese.
Place the tray in a preheated 425° oven for about 10 minutes or until the cheese is melted and the bread is toasted.
Let the chicken cutlet Parmigiana sandwiches cool slightly and sprinkle with the freshly grated Parmesan cheese before serving.
