In a bowl, combine the flour and Greek yogurt together using a wooden spoon.
As soon as the dough comes together, turn the dough out onto a floured surface and knead until the dough forms a ball.
The dough is quite sticky, so make sure you flour your hands and the surface well. You may need to work extra flour into the dough to get it to come together.
Cut the dough in half and then in half again until you have four even pieces.
Shape each piece of dough into a long log about 4 to 6 inches long. Then make a circle pinching the ends together forming the bagel shape.
Cut a piece of parchment paper to fit inside the air fryer basket.
Gently lift the bagels and place them on top of the parchment paper.
In a small bowl, whisk the egg white until frothy. Using a pastry brush, gently coat each bagel with the egg wash.
Generously sprinkle your favorite everything bagel seasoning over the bagels.
Air fry at 350°F for 15 minutes, or until golden brown and cooked through. Keep a close eye on them, as cooking times can vary depending on your air fryer model.
Remove from the air fryer and let them cool for a few minutes before slicing.

Notes
Use full-fat Greek yogurt for the best texture and flavor. Non-fat may make the dough too sticky.
Flour your surface and hands lightly to prevent sticking while shaping the bagels.
Add toppings! Brush bagels with a little egg wash and sprinkle with everything seasoning, sesame seeds, or cinnamon sugar before air frying.
Don’t overcrowd the air fryer. Cook in batches if needed to ensure even air circulation and browning.
Let them cool for a few minutes before slicing—they’ll firm up as they rest.
