Ingredients

boneless chicken breasts

Roma tomatoes; sliced

fresh basil leaves
cut into ribbons to use as a garnish

Instructions
Preheat oven to 400°F.
Place chicken breasts into a
9X13 baking dish
that's been sprayed with non-stick baking spray.
Brush the chicken with the vegetable oil and season with the salt, pepper, and Italian seasoning.
Bake the chicken for 20 minutes or until the internal temperature reaches 150°F.
Remove the baking dish from the oven and top the chicken with the sliced mozzarella cheese and the sliced tomatoes.
Return the chicken to the oven and continue to bake for another 5 - 10 minutes or until the internal temperature reaches 165°F.
Remove the chicken from the oven and allow it to rest for a few minutes before transferring to a serving platter.
Drizzle with the
balsamic glaze
and garnish with the fresh basil.
