Chocolate Pudding Peeps cups takes a classic dirt pudding recipe and turns it into the perfect Easter Dessert for your family. The best part is that you don't have to be an expert baker or decorator to make something festive.
Add 3 to 4 drops of green food coloring to the shredded coconut in a plastic bag.
Seal the bag and squish the food coloring into the coconut until all of the pieces are colored green and look like grass.
Cover the bottom of the cups with crushed Oreo cookies.
Combine the pudding mix with the milk and whisk till fully combined. Set aside for a few minutes until the pudding has thickened. Then divide the pudding between the four cups.
Allow the pudding to chill for at least 90 minutes before continuing with the recipe.
When ready to serve, add another layer of cookie crumbs on top of the pudding followed by the green colored coconut.
Press one bunny and one chick Peeps on the top of each cup and then decorate with the chocolate eggs.
Notes
A 5.1 ounce box of pudding will also work for this recipe.
You can prep the pudding and coconut grass a day ahead and store them separately in the fridge until ready to assemble.
Make sure to use instant pudding mix, not cook-and-serve, so it thickens quickly without needing heat.
Let the pudding sit in the fridge for 5–10 minutes after mixing so it’s thick enough to layer without running.
Place the cookies in a zip-top bag and crush them with a rolling pin for quick and easy "dirt" topping.
Serve in clear plastic or glass cups so the layers show through—perfect for Easter dessert tables.
