In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
In a separate bowl, beat the eggs, then add the buttermilk, melted butter and vanilla extract. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Remember not to overmix; a few lumps are okay.
Preheat a griddle or non-stick skillet over medium heat. If using a skillet, lightly grease it with cooking spray or butter.
Pour ¼ cup of batter onto the griddle for each pancake. Add the sprinkles evenly over the top.
Cook until bubbles form on the surface and the edges start to set. This should take approximately 2-3 minutes.
Carefully flip each pancake with a spatula and cook the other side until golden brown, about 1-2 minutes more.
Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter.
Notes
Do not overmix the pancake batter. It's okay to have a few lumps.
For a truly decadent treat, substitute some of the buttermilk in your pancake batter with eggnog. This will give your pancakes a rich and creamy texture with a hint of nutmeg!
