Notes
Once the chicken is fully cooked, shred it right in the crock pot using two forks, or use a hand mixer for quick and easy shredding—it practically falls apart! There are so many delicious ways to serve this dish:
Spoon it over freshly cooked rice or quinoa for a hearty, satisfying meal.
Turn it into a burrito bowl by adding black beans, corn, avocado, and a sprinkle of shredded cheese.
My favorite way? Pile it on top of a bowl of crisp romaine or iceberg lettuce for a taco salad vibe.
Don’t forget the toppings—crushed tortilla chips, sour cream, sliced jalapeños, or a drizzle of ranch dressing all add great flavor and texture.
