Prepare the Pudding:
In a large bowl, whisk together the pudding mix and milk for 2 minutes, set aside to allow it to thicken for about 5 minutes.
Divide the pudding mixture into two separate bowls. Add food coloring to each bowl. I used a few drops of red to get a pink colored pudding and a few drops of green to get the light green colored pudding.
Divide the Cool Whip evenly among the bowls of colored pudding.
Assemble the Pudding Cups:
Add one to two tablespoons of the cookie crumbs to the bottom of each serving cup.
Add a layer of the pastel green pudding mixture.
Then add another layer of crushed cookie crumbs followed by a layer of the pink pudding mixture.
Refrigerate for at least one hour.
Right before serving, top each pudding cup with a dollop of Cool Whip and decorate with pretty Easter sprinkles.
