Mix together 2 cups of flour, baking soda, and baking powder in a medium bowl.
Mix together remaining 1 ½ cups flour, ginger, cloves, cinnamon, and allspice in a separate bowl.
Layer flour-baking powder mixture, then the brown sugar, and finally the flour-spice mixture into a 1-quart wide mouth canning jar.
Pack firmly after adding each layer.
Cover the jar with a lid and seal well. Write an instructions tag and attach it to the jar.
Notes
The nutritional information is for the full jar of cookie mix. This jar will make 24 cookies. This cookie mix should stay good for at least 3 months as long as the jar stays sealed. Store in a cool, dry, dark place.You can also freeze the cookie mix in the jar for up to a year.
