These gingerbread men cookies are made with warm spices, dark brown sugar, and an easy icing. They're easy to make and perfect for decorating with family.
Cream the butter, brown sugar, and granulated sugar together.
Add the corn syrup and beat for another minute.
Sift the flour, baking soda, and spices together. Add to the butter mixture.
Knead until a soft and non-sticky dough forms.
Roll the dough out to ¼-inch thick in between 2 sheets of parchment paper. Refrigerate for at least 30 minutes.
When ready to bake, preheat the oven to 350°F. Take the sheet of dough out of the refrigerator, and remove the parchment paper. Use cookie cutters to cut out shapes.
Bake for 10-12 minutes, then cool for another 10 minutes.
To make the icing, whisk together the powdered sugar and lemon juice. If necessary, add a little more lemon juice or powdered sugar to achieve the desired thickness of icing.
Decorate the gingerbread cookies with icing, mini M&M's, and sprinkles.
Notes
If you don't have turbinado sugar, swap it out for granulated sugar.
For more of a molasses flavor, I used dark brown sugar, but you can use light brown sugar instead.
You can substitute water or milk for the lemon juice in the icing recipe.
