Instructions
Combine the eggs, milk, salt, pepper, and red pepper flakes in a small bowl.
Use a whisk or fork and mix until well combined.
Add in the chopped spinach, chopped tomatoes, and feta cheese. Stir just to combine.
Heat up a small saute pan over low-medium heat and spray with non-stick spray.
Add in the egg mixture and let cook for a few minutes (about 5) until the egg mixture starts to set.
Once the egg mixture is starting to firm, gently use a spatula to fold the mixture in half.
Continue to cook until there is no more liquid or is cooked to your desired consistency.
Serve warm and enjoy. (You can sprinkle with additional feta if desired).
