Monster Eye Cookies
Made with a cake mix and candy eyes, these Halloween Monster Eye Cookies are easy to make and only require a few ingredients.

15.25 ounce box Vanilla Cake Mix
8
ounces
cream cheese
softened

egg

butter
softened
½
teaspoon
pure vanilla extract

tablespoons
powdered sugar
assorted food colorings

Instructions
Preheat oven to 350°F
In a mixing bowl, blend together the softened butter, egg, and cream cheese until light and fluffy.
Mix in the cake mix.
Divide the batter into 3 separate bowls.
Add your choice of food coloring to each individual bowl and mix until all combined.
Chill the dough for 30 minutes.
Roll the dough into balls, then roll the balls into the powdered sugar.
Place the cookie balls on a baking sheet that's been lined with parchment paper.
Press the cookies down a bit with your hand or the bottom of a cup. Not too much, you don't want flat cookies.
Bake for 10-12 minutes.
Remove the cookies from the oven and decorate by adding the candy eyes immediately.
Notes
If the dough feels too sticky while rolling them into balls, you can add a tablespoon or two more of flour to help firm them up.
Store cookies in an airtight container at room temperature for 4-5 days or freeze up to 3 months.
