Pulse the Oreo cookies in a food processor until finely crumbed. Add the softened cream cheese and vanilla extract, processing until well combined.
Chill the cookie mixture in the freezer for 15 minutes.
Using a cookie scoop, portion the dough into balls and roll them smooth between your palms. Arrange them on a parchment-lined baking sheet.
Freeze the cookie balls for 15-30 minutes.
Melt all the chocolates separately in microwave safe bowls, using 30-second intervals.
Divide the melted white chocolate evenly into 3 separate bowls. To the first bowl, add a few drops of green food coloring and stir until evenly combined. To the second bowl, add a few drops of red food coloring and stir. Leave the third bowl of white chocolate plain.
Dip some cookie balls in white chocolate, others in milk chocolate, letting the excess drip off. Place them back on the parchment-lined sheet.
Quickly decorate with Christmas sprinkles and drizzle with melted red and green candy melts.
Allow the cookie balls to harden and set before packaging or storing in airtight containers
Notes
Longer freezing makes dipping easier, but avoid excessive freezing to prevent "sweating" as the cookie balls come back to room temperature.
The best way to dip Oreo balls is using a fork! Simply drop the ball into the melted chocolate and gently turn it with the fork until fully coated. Lift it out and tap off any excess chocolate before placing it on parchment paper to set.
