Instructions
Line a baking sheet with parchment paper. Set aside.
In a microwaveable safe bowl, melt the chips in 30 second increments, stirring after each increment until completely melted and smooth.
Begin dipping the crackers into the melted chocolate being careful not to over-crowd the bowl.
Use a fork to lift the cracker out of the melted chocolate and then gently tap the fork on the side of the bowl for the excess chocolate to fall off the cracker.
Place the cracker on the baking sheet that's been lined with parchment paper and allow to harden completely.
Drizzle white melted chocolate on top to decorate.
Notes
If you can't find the mint chips, you can make chocolate flavored with mint yourself by melting chocolate candy melts according to the label directions. Then stir in ¼ teaspoon mint extract or peppermint extract. Taste the melted chocolate to make sure it tastes minty enough for you.
