Stir together the crushed Oreo cookies and cream cheese until smooth and well combined.
Use a tablespoon or small cookie scoop to scoop the mixture and roll it into a ball between your hands.
Place each ball on a parchment paper lined baking sheet. When all the Oreo mixture has been formed into balls, place the baking sheet in the refrigerator to chill for at least 30 minutes.
When you're ready to start decorating, melt the chocolate chips and dip one Oreo ball into the melted chocolate, coating all sides.
Transfer the chocolate covered ball back to the parchment paper lined baking sheet and immediately press four or five pieces of candy corn into the top of the ball to make the turkey's feathers, then decorate the front of the ball with two eyes. Press a candy piece on it's side into the center of the ball to make the turkey's beak.
Continue decorating until all the Oreo balls have been made into turkeys, then place the pan back in the refrigerator to chill for at least 30 minutes, until the chocolate has hardened.
Notes
You'll want to add the decorations while the chocolate is still wet, so have all your decorations ready to go so you can work quickly.
