In the bowl of your KitchenAid mixer, add the butter. Cream until smooth and fluffy. Add the sugar followed by the eggs, vanilla extract.

Divide the dough into half and shape into logs. Wrap in plastic wrap and chill for 30 minutes. You could also freeze the dough for up to 6 months at this point.

Melt the white chocolate according to the package directions. Make sure the cookies have cooled completely before dipping half the cookie into melted chocolate.
