– Zucchini – Flour – Egg – Milk

– Italian Seasoning – Baking Powder – Mozzarella Cheese

STEP 1 

Trim and grate the zucchini using a box or rotary grater.

STEP 2 

After grating, press the zucchini in a sieve to remove excess water.

STEP 3

Mix flour, baking powder, and Italian seasoning.

STEP 4

Mix egg and milk, then add to dry ingredients.

STEP 5 

Add grated cheddar cheese, or use mozzarella or Monterey Jack.

STEP 6

Add the grated zucchini to the batter and mix to combine.

STEP 7

Squeeze excess water from zucchini to avoid mushy puffs.

STEP 8

Gently mix until just combined.

STEP 9

Spoon into greased mini muffin pans or use paper liners.

STEP 10

Bake at 375°F for 20 minutes or until a toothpick comes out clean.

STEP 11

Serve with homemade ranch, tomato sauce, or pizza dipping sauces.
