In the bowl of a KitchenAid Mixer, beat the softened butter for a few minutes. Then add the Swerve Confectioner's Sugar.

Use a small cookie scoop or a tablespoon and form the dough into 1 inch balls.

Bake in a preheated 325°F oven for about 12 minutes or until they are firm to the touch.
After a few minutes of cooling, toss them in the Swerve Powdered Sugar. Only do a few at a time so you don't risk breaking the cookies.
