Brush with the olive oil and sprinkle with the Ranch seasoning mix and black pepper.
Flip over each potato slice and repeat.
Bake for 20 minutes.
Remove the baking tray from the oven and flip the potato pieces over. Return the tray back to the oven.
Turn the oven up to 375°F and continue baking the potatoes for an additional 15 minutes.
Remove the baking tray from the oven and turn the oven temperature up to 425°F.
Top each potato with the cheeses and the crumbled bacon. Return the baking tray to the oven and bake for 5 minutes or until the cheese is bubbling.
Serve with sour cream on the side.
Notes
Don't overcrowd the pan. Give the potatoes enough room on the baking sheet to allow for proper air circulation. Overcrowding can lead to steaming rather than roasting.
