Cheesecake Stuffed Strawberries are the perfect finger food appetizer or dessert to serve for brunch, bridal showers or any special occasion you might be celebrating with family and friends.
Prepare the strawberries by washing and drying completely.
Slice each strawberry in half being careful to keep the stem in place.
Then using a small spoon or a strawberry huller, hollow out the middle of each strawberry half being very careful not to go too deep.
Set the strawberries aside while you prepare the cheesecake mixture.
Place the heavy whipping cream in the bowl of your Kitchen Aid mixer and using the wire whisk attachment, beat the whipping cream until stiff peaks form.
Transfer the whipped cream to another bowl and prepare the cheesecake mixture.
Place the softened cream cheese, plain Greek yogurt, sugar and vanilla extract in the bowl of your Kitchen Aid mixer and beat until smooth.
Fold the whipped cream into the cream cheese mixture until all is combined.
Add the whipped cream and cheesecake mixture to a piping bag that's been fitted with the star tip.
Pipe the cream cheese mixture into each sliced strawberry half.
Sprinkle each strawberry half with the graham cracker crumbs.
Refrigerate until ready to serve.
Notes
Depending on how big or small your strawberries are, you might be able to fill more than 20 strawberries.You might also have extra cheesecake mixture leftover. I didn't find that to be a problem at all and enjoyed the leftover mixture as my little treat for the day. Refrigerate any leftover strawberries.
