Instructions
Whisk the flour and baking soda together in a bowl and set aside. Roughly chop the chocolate bunny and set aside.
Next, using a handheld or stand mixer fitted with the paddle, cream the butter with the sugar.
Then add the 2 eggs one at a time beating well after each addition.
Add the vanilla extract and the sour cream.
Add the mashed bananas and allow the mixer to blend everything together before you begin adding the dry ingredients.
Finally, gently fold in the chopped chocolate from one of the Easter bunnies; about ¾ cup of chopped chocolate.
Line the bottom and sides of a 9×5 inch loaf pan with parchment paper. I like to spray the bottom and sides as well. Add the banana bread mixture to the loaf pan.
Bake in a preheated 350° F oven for 50 to 60 minutes or until the internal temperature reads 190 - 210 degrees.
In a microwave safe bowl, add the other chocolate Easter bunny that’s been roughly chopped; about ¾ cups of chocolate. You could also use chocolate morsels. Once the chocolate is melted, use a spoon and drizzle it over the cooled banana bread.
Roughly chop about 1 cup of chocolate candy eggs and add them to the top of the banana bread with the melted chocolate. You’re going to want to move fast so they adhere to the melted chocolate.
Notes
Substitute chocolate morsels for the two chocolate bunnies.
You'll need ¾ cups of chocolate morsels for the banana cake batter and another ¾ cups of morsels for the chocolate drizzle.
