Preheat your oven to 350°F, and line a baking sheet with parchment.
In a large mixing bowl, beat the butter and both sugars together 1-2 minutes.
Add the vanilla and egg and mix until combined.
Whisk together the flour, baking soda, and salt, and slowly add the dry ingredients to the butter and sugar mixture, until everything is combined, and dough is formed.
Add the M&Ms and chocolate chips, and fold into the dough.
Use a cookie scoop to scoop the cookies onto the parchment.
Bake 9-10 minutes.
When you remove the cookies from the oven, create the bunny shapes by pressing extra M&Ms into the cookies. We made the ears by cutting M&Ms in half and pressing into the cookies.
