Instructions
In the bowl of your KitchenAid or stand mixer, fitted with the paddle attachment, beat together the butter and sugars until combined and fluffy.
Add the egg and the vanilla and beat again.
Combine all the dry ingredients in a bowl using a whisk to make sure they’re mixed together. Add the dry ingredients to the butter and sugar mixture. Work in batches, a little at a time so you’re sure to get everything combined.
Add all but ¼ cup of M&M candy pieces then add the marshmallow bits or dehydrated marshmallows.
Allow the dough to chill in the refrigerator for at least 30 minutes.
Using a small cookie scoop, place the dough onto a parchment lined baking sheet. Then randomly press the remaining M&M candy pieces into the tops of the cookie dough balls.
Bake in a preheated 350°F oven for 9 to 11 minutes.
My Marshmallow Christmas Cookies were done in 9 minutes. So watch them carefully as you don’t want to over-bake them.
Notes
If you can’t find Mallow Bits, you can purchase dehydrated marshmallows…the kind they use in hot cocoa mixes on Amazon.
