Marshmallow Christmas Cookies

Marshmallow Christmas Cookies – chocolate cookies stuffed with marshmallows and M&M candies. These are another great addition to our Christmas Cookies list that is growing day by day…and that’s a good thing! Let me show you how to bake these fun, colorful cookies that make another great gift.

Marshmallow Christmas Cookies are made with dehydrated marshmallows just like my Hot Chocolate Marshmallow Cookies. The marshmallows hold up really well to the heat of an oven because they’re dehydrated and not fresh.

If you bake with fresh marshmallows, the end result is usually a much gooier type of cookie recipe, like a s’mores recipe or cookie. Using the dehydrated marshmallows gives you the same taste, but a much better texture when baking.

These are the same type of marshmallows you find in the kid-favorite cereal, Lucky Charms. I mean, how many of you didn’t pick all the marshmallows out of the box when you were younger? Or maybe it was just me.

  • Cookie scoops – I used a small sized cookie scoop.
  • Parchment Baking Sheets – I use these all the time!
  • KitchenAid Mixer – or any stand mixer will work.

Ingredients

Exact measurements are listed below in the recipe card. Make sure you scroll down to print and save the recipe for later!

  • Butter
  • Granulated sugar
  • Brown sugar
  • Egg
  • Vanilla extract
  • All-purpose flour
  • Unsweetened cocoa powder
  • Baking soda
  • Salt
  • M&M candy pieces
  • Marshmallow Bits or dehydrated marshmallows – see note below.

Depending on the size cookie scoop you use, this recipe should yield approximately 30 cookies.

Ingredients for Marshmallow Christmas Cookies

Baking Tip: If you can’t find Mallow Bits, you can purchase dehydrated marshmallows…the kind they use in hot cocoa mixes on Amazon.

These mini marshmallows are not traditional mini marshmallows. They are dehydrated and come in a bottle like sprinkles. 

They can be difficult to find in the grocery store. Look in the hot chocolate or coffee/tea aisle of your local grocery store. I purchased mine from Amazon. There’s always a great selection on Amazon for everything, right?

Here are two other options you can use in this recipe. I wouldn’t use traditional mini marshmallows as they will puff up too much for the recipe. And don’t worry about thinking you won’t use all these dehydrated marshmallows up! They’re perfect for hot coco all winter long!

Directions

In the bowl of your KitchenAid or stand mixer, fitted with the paddle attachment, beat together the butter and sugars until combined and fluffy. Add the egg and the vanilla and beat again.

Combine all the dry ingredients in a bowl using a whisk to make sure they’re mixed together. Add the dry ingredients to the butter and sugar mixture. Work in batches, a little at a time so you’re sure to get everything combined.

Add all but 1/4 cup of M&M candy pieces then add the marshmallow bits or dehydrated marshmallows. Allow the dough to chill in the refrigerator for at least 30 minutes.

Using a small cookie scoop, place the dough onto a parchment lined baking sheet. Then randomly press the remaining M&M candy pieces into the tops of the cookie dough balls.

Baking Instructions

Bake in a preheated 350 degree oven for 9 to 11 minutes. My Marshmallow Christmas Cookies were done in 9 minutes. So watch them carefully as you don’t want to overbake them.

How long do dehydrated marshmallows last?

The bottle I purchased is good for 6 months. The homemade version are good for a few months when stored in an air-tight container.

  • 1/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup M&M candy pieces
  • 1 cup Marshmallow Bits or dehydrated marshmallows - see note
