Zucchini Fritters
Zucchini Fritters are made with freshly grated zucchini, eggs, flour, and herbs fried in oil till crispy. Air fryer instructions included!

zucchinis; grated which makes about 4 cups

black pepper

ground nutmeg

medium garlic clover; minced

large eggs

Instructions
Grate the zucchini and transfer it to a fine mesh strainer.
Season with salt and let stand for 15 - 30 minutes.
Remove as much of the water from the zucchini by squeezing it with your hands.
Add the drained zucchini to a bowl and add the rest of the ingredients.
Mix to combine.
Use a cookie scoop or two spoons and drop the batter into a frying pan that's been heated with a little cooking oil.
Cook for 4 - 5 minutes on each side or until the fritters are crispy and golden brown.
Transfer the fritters to a baking tray that's lined with paper towels to help absorb any excess oil.
Keep the fritters warm in a preheated 250°F oven until ready to serve.
Serve with a dollop of sour cream or yogurt and a sprinkle of fresh herbs.
Ketchup works great as a dipping sauce too!
Notes
Air Frying Instructions: Prepare ingredients as directed above. Cook in a preheated 400°F air fryer for 6 minutes or until golden brown.
