Instructions
Grate the zucchini and transfer it to a fine mesh strainer.
Season with salt and let stand for 15 - 30 minutes.
Remove as much of the water from the zucchini by squeezing it with your hands.
Add the drained zucchini to a bowl and add the rest of the ingredients.
Mix to combine.
Use a cookie scoop or two spoons and drop the batter into a frying pan that's been heated with a little cooking oil.
Cook for 4 - 5 minutes on each side or until the fritters are crispy and golden brown.
Transfer the fritters to a baking tray that's lined with paper towels to help absorb any excess oil.
Keep the fritters warm in a preheated 250°F oven until ready to serve.
Serve with a dollop of sour cream or yogurt and a sprinkle of fresh herbs.
Ketchup works great as a dipping sauce too!

Tips
Squeeze as much liquid as possible from the grated zucchini to keep fritters crisp.
Use a cookie scoop or spoon to portion the batter evenly for uniform fritters.
For extra flavor, mix in a little grated Parmesan or fresh herbs.
Air Frying Tips
Prepare ingredients as directed above.
Cook in a preheated 400°F air fryer for about 6 minutes, or until golden brown.
Storage & Make Ahead
Store cooled fritters in an airtight container in the refrigerator for up to 4 days.
Freeze cooked fritters on a baking sheet, then transfer to a freezer bag for up to 3 months.
Reheat in a skillet or air fryer to bring back their crispiness.
