egg mixed with 1 tablespoon water for an egg wash

Instructions
Remove the sausage from the casings.
In a large skillet, cook the sausage over medium heat, breaking it up using the back of a fork.
Add the onions and peppers. Cook until the sausage is no longer pink and cooked through.
Remove from heat and allow to cool for at least 30 minutes while you prepare the pizza dough.
On a lightly floured surface, roll out the pizza dough into a large rectangle shape.
Spread the slightly cooled sausage and onion mixture over the top of the pizza dough to within ½ inch of the edges.
Add the pepperoni slices on top of the sausage mixture.
Add the grated mozzarella cheese on top.
Starting with one end, fold over one side and then fold the other side over on top.
Pinch the ends on each side closed and tuck them under., arrange seam side down on a baking tray that's been lined with parchment paper.
Brush with the egg wash and then sprinkle the Italian seasoning on top of the surface.
Bake in a preheated 435°F oven for 30 minutes or until golden brown.
Serve with homemade tomato sauce for dipping.

Notes
You can cover the sausage roll with a clean dish towel and allow it to rise for 30 minutes if you'd like.
