Sometimes getting lunch together for my husband to take with him to work can be a challenge. But over the weekend I tried something different...I prepared an Easy Make and Take Lunch Recipe of grilled chicken with an assortment of vegetables.
I grilled a few boneless, skinless chicken breasts along with zucchini, peppers and onions. I also steamed broccoli...which we love.
I even prepared a salad. I divided everything up in these really great containers and lunch for the coming week was ready.

Easy Make and Take Lunch Recipe Ideas

Easy Marinade for Grilled Chicken
INGREDIENTS:
- ⅓ cup Honey
- 3 TBS. Whole Grain Mustard
- 2 TBS Dijon Mustard
- 2 TBS Olive Oil
- 2 cloves minced garlic
INSTRUCTIONS:
- Combine the above ingredients in a mixing bowl.
- Pour the marinade on chicken and refrigerate for a few hours or overnight.
- Grill the chicken until it reaches an internal temperature of 165 degrees.
Grilled zucchini is brushed lightly with olive oil and cooked for a few minutes on each side until fork tender. Season with salt and pepper after it has cooked.
Slice the onion and red pepper thinly so everything cooks fast and evenly.
Everything is laid out and ready to pack up!
Divide the food and create the lunches.
