We all have a box sitting in our pantry that we reach for when we're getting ready to bake. But how long ago did you purchase that box? Do you even know if the baking soda is still fresh?
Baking soda does lose it's effectiveness over time. Here's a simple test to do before you start baking.
In a small glass, add about ½ cup of vinegar or lemon juice, to ½ TBS baking soda. The baking soda should start to bubble...a lot. If you don't see a lot of bubbles, it's time to buy a new box of baking soda. You can use the "old" box of baking soda for cleaning...no need to waste.

How long should you expect your box of baking soda to last? Depending on the humidity where you live and how well you seal the container, you should expect a box of baking soda to last around 18 months.
So the next time you're getting ready to bake and you're just not sure, why not try the above test. It only takes a minute.

Good tip! I repackage my soda into a jar with a tight lid. I just tested it. Lots of bubbles.
