It's something I've made a few times and the Colonel just loves it.Fettuccine with Roasted Tomatoes
1 container of grape tomatoes
Italian dressing
garlic
pepper
red pepper flakes
fettuccine
Parmesan cheese
Place the grape tomatoes in a container and add the Italian dressing, pepper and red pepper flakes.
Use whatever seasonings YOUR family enjoys..
Cover and let the tomatoes marinade for awhile.
In the meantime,
prepare the fettuccine according to the directions on the package.
Place the tomatoes on a baking sheet and bake at 425...
After 15 minutes the tomatoes will look like this...
Toss the tomatoes with the cooked fettuccine,
add Parmesan cheese and serve...
Really good and REALLY EASY!
I served this dish with Chicken Cutlets a week ago.

Wow, that looks yummy and so do those hamburgers with the carmelized onions. I have never tried roasting tomatoes, but I have roasted just about every other veggie there is!!lol
That is so neat that your Mom and I share the same birthday, hope you get everything done for her party ahead of time and that it turns out really great, wow, 80, I am sort of in awe over 60 but in a good way, so I can imagine how she must feel. So nice you are doing that for her, you are a sweet daughter.

Hubs would love the Fettuccine with the roasted tomatoes. The thing is, he only likes tomatoes when we grow them or get them from a nearby farmer. He hates the tomatoes we buy in the winter. Picky, picky picky
