Easy, Quick and Delicious Focaccia
Made with a YEAST dough! You can be enjoying this in under 30 minutes.
A few weeks ago I found this recipe and I wanted to share it with you today.
It uses a YEAST dough, but you don't have to wait for it to rise or do any kneading...REALLY.
Ingredients:
2 cups flour
1 cup lukewarm water (105 - 110 degrees)
1 tsp. dry yeast
1 tsp. sugar
1 tsp. salt
oil for the pan
Directions:
Begin by adding the yeast and sugar to the 1 cup of warm water.
Let stand for 5 minutes, until foamy.
Then combine the yeast and water mixture with the flour and salt.
Pour some oil to cover the bottom of an 8X8 square pan and then place the dough into the pan and poke holes in the dough. You can use your fingers or a knife.
Pour a little more oil on top of the dough and spread it around to work through the holes you just made.
Add your favorite spices and Parmesan cheese and bake in a hot 450 degree oven until golden brown.
The dough will be sticky, don't worry.
This is the way I made it the first time.It was DELICIOUS.
The bottom crust was so crispy from the oil seeping through the holes.
The second time I made the focaccia, I decided to top it with a simple tomato salad. I sliced up some tomatoes, added garlic, parsley, basil, salt and pepper. Then I added some Italian dressing and placed the tomato salad in the refrigerator for a few hours to "marry" the flavors together.
After you have poked the holes in the dough, cover with oil again, only not as much oil this time because of the salad dressing in the tomato salad.
Add the tomato salad and top with mozzarella cheese and Parmesan cheese...
Bake in a hot oven until nicely browned.
Slice and serve.
