With my Colonel gone this year, I only planted a small garden and I didn't plant any peppers. BUT my neighbor did and he brought over some peppers recently. I didn't have any use for them right away, so I decided to freeze them for the future...
Here's how I freeze garden-fresh peppers to use all year long.
Slice and dice the peppers and place on a baking sheet that is lined with foil or parchment paper.
Place the baking sheet in the freezer for about 30 to 60 minutes...until the peppers are frozen...
Frozen peppers...
Place in a freezer safe ziplock bag and store in your freezer.
The next time you need frozen peppers for a recipe, just reach into your freezer and use...
I love to use these frozen peppers on top of a homemade pizza. Delicious!

I do this too! Great way to have peppers on hand whenever you need them. I also keep half of mine julienned, just in case I through them in a fajita mix.

That is exactly what I do, except for yesterday, when I decided to dehydrate my Carmens. The next batch I will freeze. Great tip!
