I went to the garden this morning to pick some lettuce for lunch and to my surprise, this is what I came back with!
After washing and trimming the ends, boil the green beans for 3 minutes...
Then a quick bath in ice water to stop the cooking process...
Then lay them out and dry...
Place in bags, date and freeze!
I packaged them in what we would use for a meal.
They should last like this for a year, but I don't think they'll be in the freezer that long!
I found another wonderful surprise in the garden...sugar snap peas.
They were so delicious, I was eating them from the vine while picking them!
And more lettuce for lunch.
The Colonel and I are really enjoying our garden.
I'm hoping next year to plant carrots and maybe even look into planting potatoes.
Just need to figure out WHERE to store the potatoes!

Fresh beans are the best. As for storing potatoes, all I know about that, is they store wonderfully in my stomach.

Your green beans are beautiful! Our garden started out so wonderful this year and unfortunately I think it's on a steady decline. We're still enjoying tomatoes though, and I'm thankful for that! I'd love to read a review on the frozen green beans if you think of it after trying them! That would be oodles easier than canning 🙂 blessings to you and yours, Tammy

I am soooo stinkin' jealous! I didn't even get one zucchini. Not one! My goodness your garden is just amazing!!! 🙂

CONGRATULATIONS LOIS ON YOUR BEAUTIFUL BOUNTY. GOD IS SO GOOD TO GIVE US SUCH TASTY THINGS FOR OUR LABOR. AS FOR THE POTATOES,
MY DADDY STORES THEM IN THEIR STORM HOUSE, BUT THEY REALLY DON'T LAST LONG THERE. NEEDS TO BE A DARK AND DRY PLACE. RIGHT AFTER DIGGING POTATOES, YOU CAN WASH THEM REAL GOOD, BOIL, DRAIN, COOL, AND FREEZE SOME. I DO THE SMALLER ONES WHOLE. I KNOW SOME PEOPLE WHO CAN THEM, BUT YOU'D HAVE TO GOOGLE OR SOMETHING TO SEE HOW TO DO THAT. I'M NOT SURE. I'VE BEEN PUTTING UP BEANS AND PEAS ALL DAY TODAY. WE BREAK OUR BEANS BEFORE WE BLANCHE THEM. THEY WILL BE SOOOO YUMMY THIS WINTER!
KEEP UP THE GOOD WORK!

Hi Lois,
To answer your question. It was Jim Binney, who has pastored in the past as well. He just lost his wife Sandra to cancer.
Have a good evening. I'm off to the ballgame.
I will check into the video thing.

Hi Lois,
What a wonderful bounty, your produce looks so delicious, and boy are you all going to really enjoy this beautiful bounty come winter. When it is cold outside and you are sitting and eating these beauties that you have grown and preserved yourself there will come such a warm feeling over you. I also enjoy eating sugar snaps while picking.
I am also trying to catch up. I so enjoyed the Colonel's post, it just warmed my heart. I feel so much love in your home, and am always so blessed when I come by.
Blessings,
Sue

Hi, your green beans, sugar snap peas and lettuce all look great! Thanks so much for sharing the tips on the green beans! Sorry, I can't help you on any advise about potatoes though. All I was ever taught was to keep them in a dry, dark, cool place but I don't know how long they would last for you. I hope that you have a wonderful day!
Hugs...
Bobbi
So blessed! says
Oh YUM. I had green beans for lunch today. So good and especially fresh ones.

Hi Sunshine,
Good to hear from you the last few
days. You did make a good guess tho! Your beans look wonderful,
nice you can freeze them for other
meals. Have you ever made green bean salad. All you do is cook your beans then drain them, add diced up onion and tomatoes, sprinkle with garlic powder salt and pepper and mix with olive oil and red wine vinegar and some italian herbs. Delicious, go easy on the vinegar, more olive oil than vinegar is the rule.
Just add a lil then taste and add
more if you need it.
We are very glad to be home as well, Thanks for your good wishes hon,
Blessings, Nellie

Lovely vegetables! They look so green and beautiful, my mouth was watering. Especially over your sugar snap peas--one of my favorites! I love your blog. I'd like to follow but for some reason my screen isn't loading the "follow me" square. It's happening to me on all blogs today. Anyone else have this problem?

What a great garden you have there! I just love green beans~sugar snap peas and lettuce~all of it is so fresh too because you grew it yourself! We grow a little patch of strawberries and they are gone before you know it~we eat them so fast. Also, I love herbs~the lavender I keep by my bed so if I wake up at night I just sniff it and fall back to sleep. Thanks for sharing such great photo's! God bless, Rose

Not sure if my previous comment went through. I'm glad to see your garden is producing. I have been enjoying my lettuce, arugula and zucchini and am waiting on my Heirloom tomatoes. Hope all is well.

Everything looks delicious. Potatoes are wonderful to grow! Not sure how to store them though. Why not freeze some of them as well? My DH grew them as a child and said they always got tons of them. I'm hoping to do a garden next year. We need to treat for grubs this year so the Japanese beetles don't eat everything in my garden next year. I had to bring my basil plants inside because they were enjoying it as much as me! Blessings, Loretta

ooh, what pretties, and what a joy to have it come from your own garden. that's a good tip about the green bean freezing, I'll have to remember that.

I love snow peass too! It's a little hot to grow them well down here though.
No, I am not expecting, we are adopting. We have been in the process for 11 months now and are just waiting. I think after 11 months I should have a baby by now, don't you think? 🙂 We are adopting domestically here out of AL. I think I will put a sidebar thingy up that has our adoption story on it.

Never tried eating them (the sugar peas) off the plant...were they as good as the cooked kind?
We need to plant more string beans, but it's been too hot during the day and then we get distracted in the evening lately.
Looks like you didn't have much of an insect problem either!
blessings and hugs,

Yum, your green beans look great! I too have a bag in my freezer, only they are from another garden. :o) Next year we will try beans. We hit a very hot dry spell and our garden did not do too well, but we are learning and even have some tips for next year. Try try again! :o)
I am like you, nibbling while picking. When our blueberries were coming in I was eating as many as I was putting in the bowl! :o)
Have a wonderful day!
Sincerely ~ Tricia Anne

All your garden goodies look so yummy!A tip for next yr. on the carrots...be sure to thin them out, I planted a bed full last yr. for the bunnies and didn't thin them and I ended up with hideously deformed 3 and 4 fingered CREATURES that did not look or taste very good, lol!

it all looks so delicious. i sure wish i had enough sun in my yard for a veggie garden.

yum yum..thanks for sharing that tip about the beans. I plan on doing that.

What a harvest! I love green beans. There is nothing like any type of vegetable fresh out of the garden. Thank you for sharing the freesing process with us. It was interesting. We are thinking of getting an extra freeser for our home so this is valuable information. I hope you have a nice day.
