For the best results, choose firm, ripe tomatoes that are free from blemishes.
When properly sealed and stored in a cool, dark place, home-canned tomatoes will keep their best quality for about 12 to 18 months. They’re usually safe beyond that if the seal is intact, but the flavor, color, and texture may start to decline over time. Always check jars before using—if the lid is loose, the contents look cloudy, or there’s an off smell, it’s best to discard them.
After your jars have cooled, press gently on the center of each lid. If it doesn’t flex up and down, the jar has sealed correctly. You’ll often hear a “pop” as the jars cool, which is another good sign. Properly sealed lids will also appear slightly concave. If a lid moves when pressed, the jar didn’t seal—store it in the refrigerator and use it within a few days.
