I went to the garden this morning to pick some lettuce for lunch and to my surprise, this is what I came back with!
After washing and trimming the ends, boil the green beans for 3 minutes...
Then a quick bath in ice water to stop the cooking process...
Then lay them out and dry...
Place in bags, date and freeze!
I packaged them in what we would use for a meal.
They should last like this for a year, but I don't think they'll be in the freezer that long!
I found another wonderful surprise in the garden...sugar snap peas.
They were so delicious, I was eating them from the vine while picking them!
And more lettuce for lunch.
The Colonel and I are really enjoying our garden.
I'm hoping next year to plant carrots and maybe even look into planting potatoes.
Just need to figure out WHERE to store the potatoes!

MY DADDY STORES THEM IN THEIR STORM HOUSE, BUT THEY REALLY DON'T LAST LONG THERE. NEEDS TO BE A DARK AND DRY PLACE. RIGHT AFTER DIGGING POTATOES, YOU CAN WASH THEM REAL GOOD, BOIL, DRAIN, COOL, AND FREEZE SOME. I DO THE SMALLER ONES WHOLE. I KNOW SOME PEOPLE WHO CAN THEM, BUT YOU'D HAVE TO GOOGLE OR SOMETHING TO SEE HOW TO DO THAT. I'M NOT SURE. I'VE BEEN PUTTING UP BEANS AND PEAS ALL DAY TODAY. WE BREAK OUR BEANS BEFORE WE BLANCHE THEM. THEY WILL BE SOOOO YUMMY THIS WINTER!

What a wonderful bounty, your produce looks so delicious, and boy are you all going to really enjoy this beautiful bounty come winter. When it is cold outside and you are sitting and eating these beauties that you have grown and preserved yourself there will come such a warm feeling over you. I also enjoy eating sugar snaps while picking.

Hi, your green beans, sugar snap peas and lettuce all look great! Thanks so much for sharing the tips on the green beans! Sorry, I can't help you on any advise about potatoes though. All I was ever taught was to keep them in a dry, dark, cool place but I don't know how long they would last for you. I hope that you have a wonderful day!

Good to hear from you the last few
days. You did make a good guess tho! Your beans look wonderful,
nice you can freeze them for other
meals. Have you ever made green bean salad. All you do is cook your beans then drain them, add diced up onion and tomatoes, sprinkle with garlic powder salt and pepper and mix with olive oil and red wine vinegar and some italian herbs. Delicious, go easy on the vinegar, more olive oil than vinegar is the rule.
Just add a lil then taste and add
more if you need it.

What a great garden you have there! I just love green beans~sugar snap peas and lettuce~all of it is so fresh too because you grew it yourself! We grow a little patch of strawberries and they are gone before you know it~we eat them so fast. Also, I love herbs~the lavender I keep by my bed so if I wake up at night I just sniff it and fall back to sleep. Thanks for sharing such great photo's! God bless, Rose
