Recipe Notes
Refrigerate the Rolls Overnight: After the dough has risen, roll out the dough on a lightly floured surface into a rectangle and spread the cinnamon sugar filling evenly over the dough. Then form the rolls and place in a prepared baking casserole dish.
Use a Pan with High Sides: Place the sliced cinnamon rolls in a baking dish with high sides. I like to use a 9X13 casserole dish. This prevents the rolls from spreading out too much during baking and helps them rise upwards instead.
Give Space for Rising: Arrange the cinnamon rolls in the baking dish with some space between them to allow for expansion as they rise. This helps them bake evenly without touching each other too much.
Allow for a Second Rise: The next morning, take the rolls out of the refrigerator and let them rise for another 30-60 minutes, or until puffy and nearly doubled in size.
Bake at the Right Temperature: Preheat your oven to the temperature specified in the recipe and bake the cinnamon rolls until they are golden brown and cooked through. Avoid overbaking to ensure they stay soft and moist.
Top Tip
When making overnight cinnamon rolls, make sure to cover the dough tightly to keep it from drying out in the fridge.
I like to use Glad Press'n Seal Plastic Food Wrap to cover the casserole dish.
It helps lock in moisture and prevent a dry, crusty surface. This will give you softer, more delicious cinnamon rolls the next day!
- PRESS'N SEAL PLASTIC FOOD WRAP: With a quick press of a finger, Glad Press'n Seal Food Wrap keeps food fresh with a leak proof, air tight seal,
Can you leave homemade cinnamon rolls out overnight?
Yes, you can typically leave homemade cinnamon rolls out overnight, as long as they don't have any frosting containing cream cheese or dairy products. Unfrosted cinnamon rolls are considered low-risk and can be stored at room temperature for a few days.

Can you let cinnamon roll dough rise overnight?
Yes, you can absolutely let cinnamon roll dough rise overnight. In fact, it's a common practice that yields delicious results! There are two ways you can do this:
After kneading the dough, place it in a greased bowl, cover it tightly with plastic wrap, and refrigerate it overnight (or for up to 18 hours).
Or you can choose to shape the cinnamon rolls, place them in a baking dish, cover tightly, and refrigerate overnight. This is the method I use when preparing my Homemade Overnight Cinnamon Rolls Recipe.
