Baked Jalapeno Popper Dip
- When cooking with a cast iron skillet, it's important that you use wooden or silicone type utensils. If you use a metal spoon, it will scrap and damage the cast iron skillet.
- Make sure the cream cheese is soft so it blends with the other ingredients.
- Spread the cream cheese mixture evenly in the skillet.
- Be careful not to overfill the skillet so nothing overflows while baking.
- Keep an eye on the dip while it cooks so it doesn't burn.
- Be careful when handling the skillet. It will be very hot when you remove it from the oven. I like to use these silicone handles and grips from Amazon.
Baking it in a cast iron skillet keeps it hot and bubbly but don't worry if you don't have a cast iron skillet? Any baking dish works!

Substitutions and Variations
- You can substitute the fresh jalapenos with pickled or canned chopped jalapenos. Make sure you drain any excess liquid before adding them to the dip.
- Another substitution would be to use canned green chilies instead of the jalapenos.
- f you have pickled jalapenos in your pantry, you can use them instead of fresh ones. Just be sure to drain off any excess liquid before adding them to the dip.
- Swap out the Colby Jack cheese for cheddar cheese or a mixture of both!

- The next day, grease the cast iron skillet and bake according to the directions listed above.
Insider Tips from My Kitchen to Yours
✔️ DO remove the seeds and membranes from the jalapeños if you prefer a milder dip, or leave some in for an extra spicy kick.
❌ DO NOT skip checking the dip while broiling—it can burn quickly.
Storing, Freezing, Thawing and Reheating Tips for Dips
Refrigerator: If you have any leftover jalapeno popper dip, you need to store it in the refrigerator in an airtight container. Make sure you remove it from the cast iron skillet! Leftover dip will be fresh for 3-5 days.
Freezer: You can freeze any leftovers as well. Transfer the leftovers to a freezer-safe container and store in the freezer for up to 2-3 months.
Thawing and Reheating: When you're ready to eat it, simply thaw it in the refrigerator overnight and then reheat it in the oven or microwave until it's warmed through.

I have saved this dip recipe to make one day soon, as I have many of your wonderful recipes! I saw it the other day and did not have time to comment to tell you how wonderful it looked. Hubby had already requested his rotel with sausage dip for SBS, but this sounds and looks delish!

Here it is Saturday night at 11:00, and i am hungry, wanting something to snack on and I visit here and see all these goodies. I think I will just get off the computer and quietly slip by the refrigerator, making sure I don't stop, and go to bed,~smile~
Enjoy your weekend, and the Super Bowl, I don't have a favorite as my team didn't get to go.
Hugs,
Sue

Lois,
This dip looks wonderful! I must try it sometime. Yesterday you posted about the quiche. Quiches are great for company because they elegant looking, impressive yet not expensive and very easy! How much do you like spinach? I have an extremely easy spinach soup recipe that got my spinach hating husband to eat it. His mother was shocked. Score one for the daughter-in-law! Let me know if your want it - I like to share.

That dip sounds great for the game... but I won't be home to make it... So I think I am going to make this for my Hubs and his poker buddies one night they are having a game.
Paula says
Okay, I will definitely be trying this! It'll be perfect for the game. I was pulling for the Saints so I really don't care who wins, but the Patriots have an awfully cute quaterback... just sayin'. *hehe*
Debbie says
Good morning! YUM...that sounds sooo good. But then just about any kind of dip is something I just love. We will be watching the game at my sons house after church so who knows what she might whip up, haha. My husband played football at Nebraska and is therefore a HUGE football fan, and all of my boys (especially James) enjoy the game. but by far our biggest fan of the game is my daughter Melody. How funny huh? She knows all the teams, who plays for who, who coaches who etc. And for the last 9 years her favorite team is the Patriots. Oh and Tom Brady of course. Sooo needless to say I am rooting for them for her. She never has totally recovered from the loss they suffered the last time the Pats made the super bowl, haha. Sooo hopefully there will be different results this time. Hope you have a wonderful week-end Lois! HUGS
